1lb cubed beef
3 red chilies, seeded, crushed
3 cloves garlic, crushed
3 tbsp. vinegar
2 tsp. tomato paste
2 tbsp. curry powder or curry paste (Vindaloo)
2 bay leaves
2 tsp. brown sugar
2 tsp. turmeric
1 tbsp. oil
1 tbsp. cornstarch
1 tbsp. lemon juice
1 tsp. seasoned salt
1 tsp. mustard seed
1 tsp. each of cinnamon, cloves, ginger, basil,
black pepper, ground cayenne, cumin, & coriander
one cup of beef broth
1. Melt oil in large frying pan on low heat.
Add cubed beef and brown all sides until golden
brown for approximately 4 - 5 minutes.
2. Add onions, chilies, garlic, curry powder,
turmeric, spices and mustard seed. Stir in 2 -3
minutes
3. In a small bowl, mix together tomato paste,
sugar, lemon juice, and beef broth. Then pour
over the meat gently.
4.Cover with lid. Simmer on low heat for one hour.
Stir occasionally. Meat should be tender.
5. Add more stock or water if the mixture begins
to dry out.
If you want sauce to be thickened, add a little
more cornstarch.
