1 pound can of black beans drained
4 C. julienned jicama (about 3 pounds pre trimmed)
1 large red bell pepper julienned
1 10 oz. package frozen corn thawed
1/2 C. fresh lime juice
1/4 C. olive oil
1/2 C. ALLIGATOR
ALLEY ASPHALT
1 tbs. salt
1/2 tsp black pepper
1/2 C chopped cilantro
In a large bowl combine the vegetable and mix.
In a mixing bowl combine lime juice, salt and
pepper, oil and ALLIGATOR
ALLEY ASPHALT. Wisk to incorporate.
Slowly wisk in oil. Just before service, pour
dressing over vegetables and toss well Garnish
with chopped cilantro.
