(4) 8-ounce chicken breasts, boned and skinned
1/4 cup dark brown sugar
1/4 teaspoon freshly ground cloves
2 tablespoons peeled, minced ginger
1/4 teaspoon minced scotch bonnet peppers. Stems
removed and seeded
1/2 teaspoon soy sauce
1 cup peeled and diced mangos
Saute the chicken breasts in a little oil until
browned
Remove from the skillet and keep warm
Wipe the skillet clean, add 1 teaspoon of oil
and all the other ingredients except the mangos
Cook until thick and bubbly.
Add the mangoes and cook until warm. Place the
chicken back into the mixture and heat gently.
Serve with rice.
