1 1/2 Pounds grouper (or other white fish) fillets,
cut into portions
1 C. Flour seasoned to taste with salt and pepper
1/2 Stick of butter
1/4 C. Peanut oil
1/2 C. Chopped onions
1/2 C. Golden rasins
1/4 C JAMAICA
ME SWEAT
1/4 C Lemon juice
1/4 C. Honey
Heat oil and butter over medium heat. Salt and
pepper fillets and dredge in flour, patting off
excess flour. Fry fish in oil, turning once when
lightly browned, but not cooked through. Remove
fish and set aside. Add onions and rasins to pan
and cook until onions are soft. Add JAMAICA
ME SWEAT, lemon uice and honey and
reduce liquid by one third. Return fish to pan
and continue reduction until a thick sauce results
and fish is cooked through and flakes when tested
with a fork. Plate fish and spoon sauce over fillet
before service.
