1 large onion, diced
1 large bell pepper, diced
4 celery stalks, diced
1 pound smoked sausage, cut into 1/4 inch slices
1 TBS olive oil
4 C cooked chicken, chopped
3 C uncooked rice
2 cans French onion soup, undiluted
1 can each of chicken and beef broth
1/4 C CAJUN
BOTTLE ROCKET
Pre-heat oven to 350 degrees. On stove top,
saute first 3 ingredients in hot oil in a Dutch
oven that has a tight fitting lid till sausage
in browned. Stir in chicken and rest of ingredients.
Cover Dutch oven and bake for 40 minutes, stiring
after 30 minutes. Serve with crusty bread and
