4 garlic cloves, minced
4 scallions, chopped
16 medium tomatillos, husked and diced into 1/4"
pieces
1 Tbs chopped fresh cilantro
1 habanero, seeded and minced
2 tsp fresh lime juice (about 1 lime)
Salt to taste
Purée the garlic, scallions, and half the tomatillos
in a food processor.
Combine the purée in a large bowl with the other
half of the tomatillos and the cilantro, habanero,
lime juice, and salt.
Let stand for at least 10 minutes before serving.
Serve at room temperature.
